Ever since we moved to the (fill in the blank region of the States) it didn’t take me long to first start hearing about (regional cultural classic food). After trying it at many local haunts I blah blah blah opinions about each restaurant’s version I’m still not gonna tell you the recipe until you scroll FOR A WHILE. I then knew I needed this in my life and STAT. But I needed to create a healthy version that was GF, DF, Keto, Pescatarian, Vegan, AND something that was going to keep my picky kids in the house happy! My schedule is sooooo packed and I barely have time to even turn on a microwave so as you can imagine this wasn’t easy to figure out, amiright ladies? #momlife I finally landed on this delicious recipe, and I can’t tell you how much this has changed our lives for the better. Before this recipe, we didn’t EVER eat together, we were always getting sick, constantly fighting, and our family was on the verge of total collapse. I am soooooooo grateful for what this has done for us, we all see the benefits now. My oldest son has college in his future, I’ve lost all my weight, and my marriage is a honeymoon everyday.
